Slow Cooked Beef Brisket with BBQ Sauce

This wonderful recipe is perfect for winter weekends or plentiful BBQ. The slow cooking process creates tender beef full of rich flavours from the natural Devon pastures. The rich and deep BBQ sauce pairs beautifully with this tender and flavourful piece of meat. Serve this dish with sour bread or fluffy baked potatoes.

Ingredients

1.2 kg beef brisket

2 tbsp sunflower oil

3 tbsp brown sugar

1-2 tsp chilli powder

1 tbsp paprika

2 tsp cumin

2 tsp garlic powder

2 tsp salt

½ tsp black pepper

200 ml tomato ketchup

100 ml cider vinegar

200 ml apple juice

2 Large Onions (Diced)

3 tbsp maple syrup

500 ml beef stock

Method

Pre-heat the oven to 145c.

Heat the sunflower oil in a large saucepan until hot, add the beef brisket and brown nicely on all sides.  Remove to a flameproof casserole dish or large roasting tray.

Add all of the other ingredients to the frying pan and bring to a boil for 5 minutes, pour over the beef brisket, cover and cook for 3 ½ hours or until tender.

Remove the beef from the baking dish and place it on a serving platter, pour the juices into a saucepan and reduce the sauce to the desired consistency and serve with the beef brisket.

Brown rice and black beans are delicious with the beef brisket also a chilli mayonnaise.
