Our hand-rolled brisket joint is 100% Pasture-Fed, dry aged for 28 days to allow the rich flavours from the varied grass to develop. Our butterfly friendly Beef Brisket is from our farms dedicated to supporting biodiversity. This joint is full of rich earthy character, with succulent fat created from our Pasture-Fed rearing methods.
All our beef comes from farms supporting rare species such as Cuckoos, Marsh Fritillary Butterfly, Heath Spotted Orchid, Merlin, and Emperor Moths.
Cook your meat
Brisket is best cooked slowly over several hours to allow the rich meat to become tender and release even more wonderful favour.
Allow your joint to reach room temperature, with the fat facing up roast your joint at 220c | 200c (fan) for 1hr 15 until the brisket develops a golden brown crust. Reduce the temperature to 150c | 130c (fan) roast for another 2hr 45 or until a from meets almost no resistance when inserted. Rest for at least 10mins.
Storage
We send all our wonderful Pasture-Fed meat frozen.
When your delivery arrives place it straight into the freezer in its individual packaging. To thaw remove your item from the freezer and place at room temperature or in your fridge to gently thaw.

100% Pasture-Fed meat has many health benefits:
o Lower total fat levels and a lower saturated fat content.
o Higher levels of omega-3 fatty acids and a lower, and healthier ratio of omega-6:omega-3 fatty acids
o Significantly higher levels of conjugated linoleic acid (CLA) than meat from grain-fed animals and higher levels of vaccenic acid, which can be turned into CLA.
o Higher vitamin and mineral levels. Particularly rich in vitamins A and E, and minerals such as calcium, magnesium and potassium.
Where is the meat from
Brisket is a cut of meat taken from the breast or lower chest of the cow beneath the first five ribs, behind the foreshank. The brisket supports much of the cow's weight which makes the meat tough. However, if braised, smoked or slowly roasted, it's rendered soft with the most incredible flavour.
